Rice noodles are a key ingredient in many Vietnamese dishes. They are often the basis for various broths and soups, but also many other dishes. As with Italian pasta, there seems to be an endless variety of rice noodles and they all have their own name. And as with pasta, using the wrong noodles would render this dish unrecognizable.
