Biryani (dum)
Parboil 7 minutes in spiced water, drain, layer with marinated meat and steam covered for 25 minutes.
Pulao
Sauté whole spices, add the rice, pour in stock 1:2 and cook covered for 15 minutes.
Plain cooking
1 cup rice to 2 cups water, simmer 15 minutes. Sella needs slightly more water than regular basmati.
