ApnaBaba Javentry is whole mace – the dried lacy aril that covers the nutmeg seed. Its flavour is finer and more aromatic than nutmeg itself, often described as a blend of nutmeg, cinnamon and black pepper.
Use: garam masala blends, Mughlai dishes (korma, biryani), rice pilafs and meat marinades. Beyond Indian cooking it flavours French béchamel, sweet baking and mulled drinks. Milder than nutmeg, so it never overpowers other flavours.
Preparation: add whole blades to soups, sauces or rice while cooking and remove before serving, or grind finely. About 1/4 teaspoon is enough for a dish serving 4.
