🌶️ Spicy Okra with Onions (Pyaz Wali Bhindi)
📝 Ingredients:

500 g fresh okra (bhindi)

3 medium onions
-
1 finely chopped
-
2 sliced lengthwise (thin slices)

3 medium tomatoes, peeled and sliced
-
4 fresh green chilies
-
1 tbsp ginger paste
-
1 tbsp garlic paste
-
Salt to taste
-
½ tsp red chili powder (or to taste)
-
1 tsp coriander powder
-
A pinch of turmeric powder
-
1 tbsp ghee (optional)
-
A pinch of garam masala
-
Fresh coriander for garnish
-
Cooking oil (as needed)
👩🍳 Method:
Step 1: Prepare the Okra
Wash 500 g okra thoroughly and let it dry completely (this helps reduce sliminess).
Cut each okra into 2–3 pieces.
Step 2: Fry the Base
Heat oil in a pan over medium heat.
Add 1 finely chopped medium onion and fry until golden brown.
Step 3: Add Ginger & Garlic
Add 1 tbsp ginger paste and 1 tbsp garlic paste.
Stir-fry for about 5 minutes until aromatic.
Step 4: Add Tomatoes & Spices
Add:

3 sliced tomatoes

4 fresh green chilies

Salt to taste

½ tsp red chili powder
-
1 tsp coriander powder
-
A pinch of turmeric
Cook and stir-fry for about 15 minutes until the tomatoes soften and the mixture becomes well combined.
Step 5: Add Sliced Onions
Add 2 medium onions sliced lengthwise.
Stir-fry for another 5 minutes.
Step 6: Cook the Okra
Add the chopped okra and stir-fry for a few minutes.
Cover the pan with a lid and cook on low heat for 20 minutes.
Step 7: Final Touch
Remove the lid.
Add 1 tbsp ghee (optional) for extra flavor.
Sprinkle a pinch of garam masala and garnish with fresh coriander.
