🌶️ Gol Gappa (Pani Puri) Recipe

Serves 3–4 people


Ingredients

  • 20–25 gol gappa (puris) from packet

  • Oil for deep frying

For stuffing:

  • 1 cup boiled white chickpeas

  • ½ cup spicy ready-made boondi (Haldiram or similar)

  • 1 small onion, finely chopped

  • 2–3 tbsp thick yogurt (curd)

  • 1–2 tsp green chilli sauce (to taste)

  • 2 tsp tamarind sauce

  • 2 tbsp fresh coriander, chopped

  • Salt to taste (if needed)

For gol gappa water (pani):

  • 1 mug (250–300 ml) water

  • 1–2 tsp tamarind paste or tamarind sauce

  • 1 tbsp lemon juice

  • ½ tsp chaat masala

  • Salt to taste

  • A pinch of amchur (dry mango) powder


Method

Step 1: Deep Fry the Gol Gappa

  • Take 20–25 gol gappa from the packet.

  • Deep fry in medium-hot oil until puffed, golden, and crispy.

  • Remove and place on tissue paper.

  • Let them cool completely.


Step 2: Prepare the Stuffing

  • In a bowl, add:

    • Boiled white chickpeas

    • Spicy ready-made boondi

    • Finely chopped onion

    • Fresh coriander

  • Add yogurt, green chilli sauce, and tamarind sauce.

  • Mix everything well with yogurt until creamy.

  • Taste and adjust salt if required.


Step 3: Prepare Gol Gappa Water (Pani)

  • Take one mug of water.

  • Add tamarind paste or sauce, lemon juice, chaat masala, salt, and a pinch of amchur powder.

  • Mix well until fully combined.

  • Chill for better taste.


Step 4: Assemble and Serve

  • Make a small hole in each gol gappa.

  • Fill with prepared stuffing.

  • Add gol gappa water inside or dip before eating.

  • Serve immediately and enjoy!
