Achar Gosht (Spicy Pickled Lamb Curry)

Ingredients:

Main Ingredients:

  • 1 kg lamb (bone-in pieces preferred)

  • 3 medium onions (thinly sliced)

  • 3 medium tomatoes (chopped)

  • 1 cup plain yogurt (whisked)

  • 3–4 green chilies (slit)

  • 1/2 cup mustard oil (or regular oil)

  • 2–3 tbsp achar gosht masala (store-bought or homemade)

  • Salt to taste

Whole Pickling Spices (Essential for flavor):

  • 1 tsp mustard seeds

  • 1 tsp fennel seeds

  • 1/2 tsp fenugreek seeds

  • 1/2 tsp nigella seeds (kalonji)

  • 1 tsp cumin seeds

For Tangy Flavor:

  • 2–3 tbsp lemon juice OR

  • 2 tbsp vinegar


Method:

1️⃣ Heat oil in a heavy pot. Fry sliced onions until golden brown.

2️⃣ Add whole pickling spices and sauté for 30 seconds until aromatic.

3️⃣ Add lamb pieces and cook on high heat for 5–7 minutes until they change color.

4️⃣ Add achar gosht masala and mix well. Cook for 2 minutes.

5️⃣ Add chopped tomatoes and cook until soft and oil separates.

6️⃣ Lower heat and gradually add whisked yogurt. Stir continuously to avoid curdling.

7️⃣ Add 1–1½ cups water, cover and cook until lamb is tender (45–60 minutes, or 20–25 minutes in a pressure cooker).

8️⃣ Add green chilies and lemon juice (or vinegar).

9️⃣ Cook uncovered for 5–10 minutes until gravy thickens and oil appears on top.

Garnish:

Fresh coriander leaves and thin ginger slices.

Serve with:

Naan, roti, paratha, or steamed rice.
