Frequently Asked Questions

Is fufu flour from yam or cassava?

Both in stock. Yam fufu is neutral white, cassava fufu slightly sour, plantain fufu has a sweet note from unripe plantain.

What is palm oil?

Crude red palm oil from oil palm fruit, used in West African cuisine. Gives dishes a characteristic orange colour and nutty taste. Not the same as refined palm fat.

How to cook plantain?

Ripe (yellow) plantain fried in oil until caramelised = dodo. Unripe (green) boiled 20 min or deep-fried = boli. Served with rice, beans, meat.
